I am going to need leftover turkey recipes on Friday

DH just picked up the turkey from the butcher.

I requested a 15-ish lb one expecting that would give us some leftovers since we are only having 5 people for dinner.

Nope, 25 lbs was the smallest they had.

WTF?   

They actually looked at the order form when DH went to the counter and said, yeah, I know this is a bit bigger than you requested but you are getting the smallest one we got from the farmer.  I don't even want to know how big the biggest one was.

mmm we're making a turkey just to have leftovers, we're not even doing Thanksgiving at our house. Sandwiches, soup, turkey tetrazzini. I don't know what else yet

Turkey noodle soup (I'm actually going to pressure can a bunch of this sans noodles, so we intentionally bought a big bird)
My family calls it "turkey delight" but basically a casserole with all of the leftovers - stuffing, mashed potatoes, gravy, turkey, etc. It was my Grandpa's favorite and his specialty to my dad, aunts and uncles growing up.

I'm not sure about the delight, but all of those things should freeze just fine, too!

I also like turkey noodle, especially when I have leftover stuffing. Put a scoop of stuffing in the bowl before you add the soup.

Asian turkey lettuce wraps
Slather it in BBQ sauce and serve with baked potatoes and toppings
Chop it up and toss into chili

Turkey Carnitas Tacos. Just take the cooked turkey and cut it into chunks then sauté in oil to get crispy edges then serve in tacos with all the usual toppings you like! Guac is my fav.

Wheat bread, slather both sides of bread in cranberry sauce and lots of havarti cheese, top one half with stuffing, top with turkey, butter both outside pieces of bread, grill in a pan on the stove and press down to smush everything together. Serve with leftover warmed gravy. You're welcome.

Turkey A La King!

I have to wait until Christmas for my next turkey fix. Lucky DH works across the street from a bar owned by an American and they host a huge American Thanksgiving lunch this Thursday. All proceeds to charity. So jealous of DH.
