Roasted anything will be easy, but sweet potatoes feel more like a carb side to me than a veggie one. You could chop a mix of veggies, toss with olive oil, salt and pepper (maybe even drizzle with balsamic vinegar) and roast. That would be really easy to do for a decent sized group.
@songforyou, if she did this with kale...the outcome would be kale chips! I think that is the new trendy name for them, I was surprised in bliss thread u hadn't heard of them.

I dislike kale chips, but my kid thinks they are the best thing ever. She requested them for her birthday dinner.
I am waiting for my turkey to cook, and then I can throw in the last few things. The goal is to eat between 3 and 4. We had quiche and muffins around 11:00.
