I had the carcus boiling in the stove most of the day. Now I have this wonderful, rich stock waiting to be made into soup. I can never just throw away turkey or chicken bones.
My MIL threw away our 22 lb turkey carcus. I was finally going to attempt my own stock.

making stock is really easy, it just takes all day.
Put the bones in your biggest pot. Cut the stem off an onion. Quarter it and throw it in, skin and all. Rinse 2-3 carrots. Cut them in thirds and throw them in. Wash and cut up celery. I use the middle leafy parts and the bottoms. Add 10 whole peppercorns. Fill the pot with water and gently boil for about 6 hours. Strain it and put it in the fridge overnight. Skim off the fat and it's ready to use.
