We enjoyed our stay at the Royal Plantation in Jamaica. It's a boutique branch of Sandals. Every room comes with butler service. The beach is small, but private, so you aren't accosted by vendors. Also, guests at RP are able to use any of Sandals' amenities for no additional charge, but guests at Sandals can't come to RP.
If you have kids, the Beaches hotels are great for them. I called the one in Turks & Caicos "spring break for parents."
For adults-only, I'll let others weigh in. DH and I were never big AI people until we had to factor in the little one. Having childcare included in the rates was huge.
We liked Couples resorts in Jamaica and have gone 4x. They have 4 different resorts in 2 locations (Negril and Ocho Rios) and everyone gets the same amenities/treatment unlike Sandals in which you have to pay more to get VIP service. If you sign up for their rewards program (totally free) you can transfer between the two resorts 2x a week (i.e. you can travel from one resort in Negril to the other and the one in Ocho Rios to the other) so you can check out 2 resorts during your trip.
If OP is in Florida I highly recommend a direct flight from Orlando. It takes an hour and you can bring back more booze (priorities people!).

I feel like there are two levels here: upscale "normal" AIs like the Excellence chain (the only AI I've ever been to, and we chose it because we understood it would be nicer than others) and then the off the charts hotels that manage every detail of your experience for you. The Explora hotels in Chile, for example, are almost $1,000/night/person because they're super luxury hotels that also include gourmet food and daily excursions with the top guides (they're all in nature-y areas).
