Without a photo my initial suggestion would be to put the larger and heavier items like griddle, crock pot, etc., on the bottom/base level, and then maybe incorporate some baskets on the shelf to hold smaller items.

I hate those corner cabs. I just had to detail ~200 kitchens in an elderly housing complex and almost every kitchen had them. Ugh. (The kitchens were designed by someone else.)
Thanks girls. I don't know. I'm not really in the mood to spend any more money at the moment. I might just rearrange my extra closet and that cupboard. Put the stuff in the cupboard I rarely use (extra large roasting pans, ice buckets etc.) Put the things like my crockpots, griddle etc. in the closet. It'd be more of a trek but at least stuff wouldn't fall on my head.
The thing is the stuff I have is big...so more layers wouldn't really help, kwim? I just want to be able to see in the back of this big giant black hole.
IS THAT TOO MUCH TO ASK MY FRIENDS.
I'll just keep slamming the door shut as fast as I can in the meantime and pray.

We have one of those. I hate it with a passion and ours DOES have a lazy susan. When we remodel, we're going galley style JUST so I don't have to figure out what to do with the stupid corner cabinet.
The only thing I've ever found that helped was installing one of those tap-lights in it. You know, the kind you slapped everywhere in college? Open the door, tap the little light, and at least you can see everything better. Still can't reach it and have to pull EVERY.FREAKING.THING. out of the cabinet before you can get to the stuff in the back, but at least you can see better.
