For the past several years we've spent Christmas Eve at my aunt and uncles which has been great because we get to see my cousins and their kids too.
Just this morning my aunt asked my mom to host Christmas Eve. There are a lot of dynamics going on in that my aunt is talking about leaving my uncle but only my mom and I know (but my uncle is the blood relative/my Dad's brother) so it's all weird.
We'd like to do easy buffet stuff for food. We're talking about cold cuts and croissants for sandwiches, but what would you serve along with them? My brain is on overload and I can't think so please share ideas!
I see lots of finger foods.... olives, bologna and cheese and crackers, veggie tray & dip, fruit tray... Maybe some hot easy apps like meatballs in the crockpot, queso...
Caprese salad is another great side salads for croissant sandwiches.
fruit tray, veggie tray, chips and dips, spnach dip, shrimp ring, stuffed mushrooms.
Honestly, if it was me doing sandwiches I'd go more DIY sub style. That way you'll have the toppings out, it'll look like a lot and people can pick and choose what they want. I do this a lot and it's so easy and well received and I don't need a ton of extras. Serve with chips and a fruit tray and you're done.
Otherwise, I'd make 3 pots (or whatever kinds you feel like) of soup to go with sandwiches and call it a day.

Do a decorate your own cookie "bar", maybe?
As far as mealtime foods go, I like wraps cut into rounds and stabbed through with a toothpick (KWIM?) Easy to make, easy to eat, not too expensive ...
What is the crowd? My cousins are mostly in their 40s and like hot comfort food (Roast chicken, mac & cheese, eggplant parm, meatballs, baked ziti, fresh salads) My siblings and their kids prefer DIY taco bar with shredded chicken, pulled pork, beans, different salsas, lettuce, tomato, onions, jalapenos, and lots of cheese.
