Eh, my understanding is that Hanukkah isn't that big of a holiday in terms of the religious calendar for them. For example, its not as significant as Yom Kippur or Rosh Hoshanah. I don't think its necessarily face palm worthy to forget to wish a friend Happy Hanukkah.
But perhaps one of the actual Jewish people will weigh in.
I assume she would appreciate the sentiment even if it is a day late. I used to work with a guy that was Jewish and he said it wasn't really that big of a holiday and wouldn't expect anyone who wasn't Jewish to even know when it was.
Jewish person here. Since Hanukkah is 8 days you're not late!
Also it is a pretty bottom-tier holiday as others have said. It's blown out of proportion for Christmas. Saying happy new year at Rosh Hashanah is much more important imo but also most Jewish people are aware that 98% of people follow a different religion so most of us don't get butthurt about any of it!

No apology necessary---we're only halfway through Hanukkah, and the first day is no more significant than the eighth (and perhaps less significant, if you think about it). Hanukkah is super-minor, religiously speaking, but I've appreciated colleagues and friends mentioning it.
