My non-Greek self makes excellent baklava. my dear, Greek friend took me to her yiayia's houseto learn how to make it. yiayia barely spoke English but what I did get out of the cooking lesson is that the walnuts have to be crushed by hand with a mortar and pestle. no food processors allowed. yiayia explained the trouble with all us "modern girls" is that we are in a hurry all the time. And that leads to "the phobias" and then everything just goes wrong. So the way to save your sanity is to make baklava with a mortar and pestle.
Ok, I just tried it and it is delicious. So here is my approx recipe.
Papie’s baklava Stuffing 3 cups of walnuts and almonds, chopped finely by hand (3 cups total, about half-half) ½ cup sugar 1 tbsp cinnamon Mix everything. Set aside.
Syrup 4 tbsp honey 1 ½ cup sugar 1 cup hot water 1 tbsp lemon juice 1 tbsp orange rind 1 tbsp lemon rind 1 cinnamon stick 2-3 cloves Mix everything. Bring to a boil. Remove foam. Boil for 5 minutes at medium-high. Set aside and let it cool.
Assembling 1 pack phyllo dough, thawed ¾ butter, melted and clarified Work with one sheet at a time, covering the others in a damp towel. Open the sheet, butter lightly. Put 3-4 tsp of stuffing mix about ½ inch from the edge, leaving ½ inch on each side. Fold the extra half inch on each side. Roll tightly the entire sheet. Then cut in 3-4 pieces, and set in a buttered baking dish. Set all pieces tightly together. Butter lightly the top of the baklava rolls. Bake at 350 for approx 30 minutes or until golden. Immediately pour the cool syrup over the hot baklava. Let it set for approx one hour before serving.

If i knew how to make baklava I would eat the entire pan in a single sitting (and then probably slip into a sugar coma and die). I prefer to be ignorant and just buy one little square at a time

Baklava is one of those desserts that I will gladly overpay for bc they are a bitch to make (for me, anyway. I cannot work w phyllo dough, no matter how many times I try). I commend you, those look fantastic.
