My mom is coming for Christmas (yay) and is vegetarian. The main protein is duck, all other sides/apps/desserts she can eat. I would like to prepare a small main dish for her that is vegetarian friendly so she doesn't have to rely on sides, any suggestions?
This might not help but for big holiday meals I'm happy with just sides. There are too many other yummy things like appetizers and desserts for me to miss a main dish. Your meal sounds amazing!

Vegetable or cheese lasagna was my first thought as well. You'll have leftovers of it too so if she is staying with you for a few days she could eat it again.

This is kind of where I am. I usually find that there's many more food options for me at big holiday meals than at typical meals. My SIL always does a tofurkey, but that shit's nasty.
Thanks for all the replies. I think I may just add a goat cheese, carmelized onion and honey pizza. That way it isn't a specific dish for her in case she would prefer to fill up sides as well.
