No help, because I don't cook for either (just eat the pierogy and catered chicken on Xmas Eve, and then whatever my mom feels like making on Xmas.)
But H's family does a corn casserole that is yummy that would go with ham. Otherwise maybe cinnamon apples, or cheesy broccoli casserole? (I am personally anti-green beans, but that's just because I don't like them
We usually do lasagna, garlic bread, and salad on Christmas Eve with just my parents and brothers. On Christmas Day, my aunt hosts 50 people and we have prime rib, turkey, mashed potatoes, corn, and whatever zillion other sides people bring.

My mom does Christmas Eve differently every year. She usually has some sort of theme. I know a couple times we've done stir fry, sushi, rice, and some other things. I'm not sure what she's doing this year. We are going to H's aunt's house and I think they are doing roast beef and chicken. For Christmas day, we are doing a taco bar with my dad's side of the family. That was the easiest way of doing it for everyone. Typically we do lasagna, garlic bread, and salad though.
Some things we typically have for apps or sides for get togethers: Deviled eggs Herring and crackers (usually only at Christmas) Salads (either green salads or pasta salads) Fruit with dip Veggies with dip Chips Pickle roll ups Taco dip
At my mom's we have a big Christmas breakfast. This year my brother got a turkey from work so she is going to make a dinner but not sure what she is putting with it.
At in-laws she usually does a really simple meals - lunch meat, cheese, different breads, fruit tray, veggie tray. Just a bunch of different finger foods. This year she was thinking of just doing steaks, roasted potatoes, and salad. And of course lots of Christmas cookies/treats.
I would just add a nice salad to your menu and call it good. The salad would contain: romaine lettuce, spinach, cucumbers, carrots, and cherry tomatoes. That should offset the carbs.

Offset carbs?!?!? Lol
Lol, it will at least add some greenery to the table .
