Zucchini noodles are fun! Once they are in the noodle shape saute with evoo, veggies and grilled chicken for mock pasta primavera. Add some parm at the end.
I love zucchini noodles! I Need DHs help using the mandolin to make them, though, because I almost lost half a thumb once :/
I got a mandolin for Christmas and it is still in the packaging. I am so scared to cut myself. I am going to make the kung pay zoodles next week from skinny taste.
Zucchini "crab" cakes - my H loves seafood, and I didn't tell him that there was no crab in these and he actually asked me when I went to the store to get crab. The salting and draining excess moisture step from the zucchini is key. www.mykitchenaddiction.com/2012/07/zucchini-crab-cakes/
If I'm cooking it by itself (as opposed to throwing it in a stir fry or something), I saute it in olive oil with diced tomatoes and garlic. I may add some basil or oregano. It's ridiculously simple and quick.
I don't know if you're into spicy, but, this is delicious. Throw some spears into a pan with a little oil, red pepper flakes and garlic salt. I keep them on their side for awhile so they get crispy/browned and then flip them over. When I'm done, I dip them in a sauce mixture of siratcha + soy sauce. SO good! And great to eat when I'm craving deap fried vegetable tempura.
Just coming back to say that I made these tots tonight and they were SO GOOD! One of my favorite things ever. They're going to the top of my "what to make with zucchini" list. I salted the zucchini first, and I also added half an eggplant (shredded).
