Whipped cream stays good for a long time after the expiration date. I know this will gross people out, but I used whipping cream yesterday that expired at the end of last October. The carton was unopened and the cream was fine. DH and I are both still alive after eating quite a bit of the pie and topping the cream was used in.
Make whip cream, dollop or pipe it into individual servings on a parchment lined baking sheet, freeze until solid. You now have frozen whip cream that is amazing on any warm dessert
Oh, also - for the record - the dates on heavy cream tend to be SUPER conservative. It lasts a shockingly long time because of the high fat content.

Yup. I dont know the exact chemistry, but milkfat is basically immortal compared to the liquid/protein/lactose poration of milk...so more fat = longer shelf life
