We're currently in the middle of remodeling the kitchen. So it's either going to be BLTs (cook the bacon in my electric skillet) or Marie Calendar pot pies.
I made meatloaf muffins (adapted from SkinnyTaste - ground beef, shredded carrots, steel-cut oats, and the usual seasonings and topping, in a muffin pan) and garlic-chive mashed potatoes.
I had leftover guacamole, so I googled and found this recipe. It was pretty good, but I don't have an immersion blender (gave it away last year since I never used it), so it was a little chunkier than intended. I used the full 32 oz of chicken broth, but you could use less if you want a thicker soup.
