You have a lot and I haven't looked through them all, but we eat quiche about twice a week (dinner once and usually some quiche or egg casserole on the weekend), so I don't think it's heavy. It's really filling and can be fluffy and light.
Here are some of ours.
Shepherds pie with seitan or tofu - we also do veggie pot pie with tofu
Also, just like stir fry, you can make most Chinese vegetarian with these fake chick'n stuff. I make friend rice about every 2 weeks - usually with no meat.
Veggie tacos - use grillers (fake meat - Morningstar Meal Starters Grillers are the best) and add taco stuff just like normal
Veggie lasagna - add black beans and cottage cheese to the veggies (usually zucchini, tomatoes, and peppers for us) to make the protein higher or some of the grillers (Morningstar grillers) to the sauce to make it "meaty"
I uhm, I don't think this is going to work the way you think it will. It's a lot of effort on your part that will garner a lot of resentment on his.
Eat vegetarian if you like. Let him add chicken or fish or even steak to his own plate if he likes.
I guess I just don't understand why you thought he'd consider it or why you think he will respond well to what he'll take as a petty move to "show him" what exactly I don't know.

Like once my DH bet me that he could go longer without drinking beer than me and we both went about a month without beer. Or once we bet that we could each make the best cookies, and we each had one kid to help and we made rival cookies that we had dinner guests vote one. Or even on H&G one girl added a funky new lamp and was betting on how long it would take her DH to notice it and mention it to her.
Thanks to this thread I now know my favorite moose wood recipe is no longer on epicurious. My meat loving friend requested it as her last meal veggie getting her wisdom teeth out.
I make Mexican style bowls. Trader Joes vegetarian refried beans are great for this. Those, topped with a fried egg, some salsa, and avocado -- delicious. Sometimes I add rice. Or cheese. Or pile this all on a sope or tortilla.
Look around for recipes for peanut noodles. The one I use is from a cookbook but it's pretty simple.
Also baked sweet potatoes (or regular baked potatoes) topped with fixings
Roast a whole bunch of thinly sliced eggplant, zucchini, etc. Get some roasted peppers from the store. You can stack these on sandwiches with cheese, olive tapenade, yogurt, hummus, etc.

Yeah, we do this a lot.
Like once he challenged me that if I was complaining about him draping his coats on the chairs in our kitchen to the point where they'd tip over. So he came back with "If YOU stop hanging your coat on the banister for 30 days, I will stop doing this."
And we now both hang our coat up in the closet first thing when we get home. LOL

This sounds amazing. I am going to buy this rice next time I am there.

I just had a yummy veggie stock base mulligatawny soup. Very filling and there are tons of recipes online. You could add some chick peas for more oomph.

Don't leave out some "fun" veggy food like mac and cheese, loaded nachos with spinach and cheese quesadilla's or cheese pizza with salad. We are vegetarians and we don't eat a ton of vegetables every night.
