I love Disney and am very excited to take the kids. That said, I'd choose an anniversary trip hands down. Disney will still be there next year and he definitely will get just as much, if not more, from the trip at 3,4 or 5 than he will at 2.
At this point in our life/marriage, I think my H and I get more out of trips alone than G gets out of family trips. So much of our daily energy is spent taking care of her, that I don't feel guilty about taking a few days for ourselves and our relationship. And, your son is young enough that he won't remember the trip anyway. I'd do the anniversary trip. This assumes that you're not taking your son on the anniversary trip, but if you were planning to take him with you, then I'd still do the anniversary trip, because at his age, he won't really care where you go, though I'm sure he'd love Disney while you're there.
Don't get me wrong, I love Disney, but def anniversary trip! Disney is work, and we didn't even start to enjoy it until DD was 4. Save DW for next year.
Anniversary. I'd actually want my kids to be a bit older than yours for Disney. If I'm going to spend that $$$ they better well remember it.
Can you do like a waterpark hotel weekend with your DS if you want to do something with him? They're usually fairly cheap and he'll think it's as fun as Disney anyways.

For reals. We're holding off until DS is older. And we're "let's do WDW every year!" type people. But not with DS.
Definitely anniversary. Disney will still be there in the future, and the only benefit to doing it now is that your son is free (but the flip side of that is that you still have to work around naps, toddlers are unpredictable, etc). We loved taking my toddler DD to Disney this past winter, but honestly, at this age, a kid-free vacation would always win over a family vacation for us.
I know it's hard not to get caught up in the Disney mania. A ton of my IRL friends are Disneyland fanatics and have already been at least once, if not a couple times, with their young kids. It sometimes makes me feel like my kids are missing out. But in reality, I would rather wait until the boys are older and will remember and enjoy it more.
I would do the anniversary trip and save Disney until DS is 4ish and 42 in (and hopefully is less dependent on a nap). You will get more bang for your buck that way
