I've been reading a lot about moldings for my wainscoting projects. I would start with the moldings. I wouldn't want to be stripping molding after I already painted the walls.
Prep & Paint all the moldings (even new), then paint ceiling, then paint the walls.
ETA: I like wawa 's suggestion to do a first coat on the walls, that way you don't have to cut in twice when you do the final coat. Same goes for ceiling (if you're double coating)
My method was 1st coat of paint on the walls, install all trim and window casings, caulk, fill nail holes, paint all trim (2 coats) just roughly cutting in by hand along the top edge and wiping off anything that got on the walls or ceiling so it didn't leave any bumps, and then second coat on the walls and actually cut in properly there. I don't actually tape anything - either cut in by hand, or use this thing, which actually magically works for me. YMMV.
ETA: I do actually tape one thing - anywhere that I've got trim that is close to a corner so I need to be able to paint I tby just shoving my brush in there blind. I do the trim first and get paint alllll over the wall, and then tape the trim and do the wall.
