Have you checked out the Royal Resorts. We have a time share at the Royal Cancun which is more family friendly but they have several different properties in Cancun and they are really well run. Their properties aren't as big and flashy as some of the huge all inclusive places. We love it.

We looked at Excellence Playa Mujeres, but ultimately decided on the Ritz. While not an AI, food is extremely important to us, and we spent about the same as we would have at a 5 star AI.
Cancun has really improved over the years in the fine dining department, and we were able to walk to some amazing restaurants from the Ritz.
That being said, we went to a fun club called Rose Bar at the Me by Melia, which is an all inclusive. We talked to some people that were staying there, and they all seemed to like it.

We stayed at The Royal in Playa del Carmen (sister resort to the Cancun property) on our honeymoon and loved it. Great food and gorgeous amenities. I've heard good things about the Cancun location as well.

We have stayed there too. We really liked it as well. I love fact that they have had some of the same people working there for 30 years. I have been going all my life and I still recognize some of the people from when I was younger. Also, they are so amazing. I blew a tire on my BOB and one of the guys at the front desk took it home with him and fixed it himself. He had to go out and buy a tube and everything. That is customer service.
I've been really happy with Secrets, especially their food considering it's an AI. I also like the fact that they are not huge resorts. Their two Cancun locations are Secrets Maroma Beach and Secrets the Vine. Maroma is more relaxing, and the Vine was more of an upbeat vibe. The Vine is also in a more congested area.

We also loved our honeymoon there. We have been down there 5x to a few different resorts, but never actually stayed in Cancun.

We went to Secrets Maroma for our honeymoon and LOVED it, but it is Riviera Maya.
LeBlanc, is a great choice. Excellence Playa Mujeres is wonderful, but it's about a 30 minute drive north of Cancun. In Cancun proper, check out Live Aqua, HYATT Zilara (formerly the Royal Cancun), and Secrets the Vine.

I've stayed at the following places in Cancun: - excellence playa mujeres: loooooved the pool, great room, adults only, nothing to walk around nearby if you like to leave the resort - dreams: fantastic location, pool was okay, great for a group trip when we just wanted to get drink. AI but not adults only - fiesta Americana grand coral beach: not AI or adults only but my favorite place to stay in Cancun. Great location, great rooms, great pool and pool service - Moon palace: huge resort, not walking distance to anything, rooms were nice on the side we stayed in, but not all have nice views. AI but not adults only - Ritz Carlton: great rooms and balconies, wonderful pool service, not as central as fiesta but closer to the nice mall, wonderful pool service but fiesta pool is better IMO. Not AI or adults only

I am anti Rui. Their food is terrible.
I went to Secrets Maroma a few years ago and found the food to be mediocre at best to pretty bad. I got really bad food poisoning the last day there. It is a beautiful resort though.
