I'm considering a fiesta themed party for Julia's first birthday. What would you do for a menu? The party will be at a place where I will have to bring all the food already made. I'm thinking it might not work for that reason and maybe I should just do sandwiches.
Did you guys preheat the shells? We always do this at home, but it might not be possible there. Would that be gross?
I do at home but I am sure they would be fine without.
You could make do beef and chicken in a tray with sternos and then the toppings could all sit out.
This is a good idea, I should start checking catering too. I don't eat meat, but I'll bet that's what most of my guests would want. I could probably do a tray of cheese enchiladas too if I used sternos.
Yes when we did it i did one crockpot of carnitas and one of taco beef. Salads, retried beans, Mexican rice and various tortillas/shells. Guac and salsa. It was simple enough but yummy

Taco in a bag are a huge thing here. Not sure how authentic you are going for. Small bags of Doritos crushed & all the toppings go right inside the bag, it would work perfect for a taco bar. You could do regular tortilla chips like katfco suggested.
Flour tortillas wrapped in a damp paper towel after heating & wrapped in foil holds its heat really well too.

Hmm I dont think so because I only have two crockpots

But we also had a lot of drinks so nobody probably noticed the rice went cold fast lol

I'd do catering! I bet it'd amount to almost the same cost with zero effort. Then you could do fajitas and nachos, maybe enchiladas or cheese roll ups for kids.

We have done Mexican catering before for showers that we have thrown and it is soooooo cheap compared to other options. We did a huge quesadilla platter, taquitos, chips with queso/guac/salsa and a couple of other things I can't remember. It was all ready to grab though instead of tacos or something that you have to put together.
