You might look around for a place you can take the wood to be stripped. We have a house that was built in 1905. Ours is a rental, so we don't seek perfection, but a lot of the homes around there are mint. I have been told by these mint people that you can take your wood work to a furniture stripper and they can dip the pieces for not that much money. It will save your arms, your skin, and your sinuses.
I was also going to suggest the dipping. My parents did that with a pair of old chairs ~10 years ago. I think the heat gun is a good idea also. If nothing else, it will help the first or 2nd later so you can get to the really old stuff underneath with elbow grease.
We did this with our first house. It took me 2 years to complete all the woodwork in the whole house. I did the upstairs one year and the downstairs the 2nd year. I had a toddler and a 1st grader at the time so that limited the amount of time I could devote to the project. Definitely well worth it - so enjoyed the outcome and it helped to sell the house as well.

Do you have lead paint? That's hard to remove and can be dangerous. We used Peel Away and it wasn't terrible and didn't require as much scraping. We also used a heat gun on some spots.
We did our stairway and a several doors then we quit. Maybe one day we'll be motivated to try again.
