So far we have had homemade sub sandwiches w/ carrots and broccoli side. Tonight is hamburgers with salads. Probably homemade pizza another night and then I think breakfast. Much more carb heavy than normal but I was going for easy and using what we had.

Last night was Lentil Soup with bread, tonight is BBQ chicken (I'm having scallops), corn and baked beans. Tomorrow is salmon sliders with roasted asparagus. Thursday is tortellini in a light lemon/white wine sauce with roasted Brussels sprouts. Not sure about Friday (probably sushi takeout) or Saturday. Easter Sunday we're making grilled salmon with avocado salsa and a kale salad.
Relatively simple: last night we had marinated chicken, rice, and stir fried green peppers & onion. Leftovers tonight and then because H made a crap ton of chicken, some variation for the rest of the week after we buy more veg WHY did he cook up ALL that chicken? Sigh. Maybe we'll change it up and have a large salad with the chicken on top.
