I throw a ton of it in with whatever fruit I have and make smoothies.
When I have too much, I add a little water and purée it, then freeze it in ice cube trays. Then it's ready to be added to smoothies later.
We also eat lots of spinach salads. Add cranberries, sunflower seeds, and poppyseed dressing for an easy salad. Or just tomatoes, croutons, and whatever dressing I feel like.
It's really good. Definitely garlicky because it's raw, so watch out if that's not your thing. We think it's best when you sprinkle it with some freshly grated parmesan and some spicy salt (that we find at Whole Foods, but red pepper flakes are also good).
I love spinach. I put butter in a frying pan, add garlic and cook until the garlic is done, then throw some spinach in there until it is wilted. Delicious.
- The classic way, sauteed in olive oil with garlic; sometimes I add cannellini beans - Add a handful to smoothies - Add to any stir fry, at the end - Shred a handful and add it in when you're making meatballs - Bruschetta eggs, copied from my favorite local brunch place - Cook two eggs over easy, then serve over toast which has been topped with spinach and chopped tomatoes. The eggs warm and soften the spinach just slightly, and the toast catches the runny egg center. It's so good.
