The best thing for the picture is to to get it restretched on to stretcher bars. However, you can totally have the canvas still framed! AKA: look at 99.99% of all canvases in museums.

We have a mix, but all are stretched, that's the first step - do you not want it stretched?
I prefer to have a frame as well, so I've had one added to most of them (no glass though).
ETA: the frame is always custom though so I always get coupons and go to Aaron Bros for people in this area (sorry that doesn't help you!). The frame gets added to the outside of the canvas, I can show you examples of ours if you want. There are different styles though and you can add inserts that are sort of fabric versions of mats.

I guess in my head, I was going to have it framed like a quilt and then put a matt over where the canvas edge is? I don't know what I was thinking.

No mat frame direct to canvas is typical or if you're concerned, they can add glass. It you want a matted look, they can add a "liner", which is fabric wrapped framing (usually linen), and then the frame. Aw, wish I could help! i kind of miss designing framing.
