We took the Crown Princess out of Venice a few years ago and loved every minute of it. It was longer than 7 days, but they do offer plenty of 7 day options.
In addition to Venice we went to Dubrovnik, Rhodes, Corfu, Athens, Olympia, Mykonos, Santorini, Ephesus, Naples, and ended in Rome.
We did a 7-day cruise on NCL roundtrip Venice. I'd recommend it. At first I was opposed to the cruise (not my favorite) but the Greek Isles are perfect for cruising.

I am not a cruise person either, but i had a feeling it would be perfect for the Greek Isles.

Ending in Rome would be perfect since i want to spend a few days there too. I have no desire to spend any time in Venice, but boarding a ship there would be fine.
It looks like the crown princess is doing mostly alaska and mexico trips these days
The sailaway out of Venice was spectacular. The Crown might have moved on to other locations, but you can check other Princess ships for itineraries.
While I had been on Princess prior to our Mediterranean cruise, that was not the primary reason for choosing them. We compared itineraries, dates, and costs and picked what worked best for us. It just happened to be Princess. I'd definitely recommend them, but make sure you choose based on what ports you want to see.

If you're not really into cruising, there are also some companies that have smaller island sailings around Greece. I know GAdventures runs a small ship in the Greek islands, but I'm pretty sure I've seen others.

We did 7 nights Celebrity from Venice last July and loved it. We went to Mykonos & Corfu as well as Dubrovnik & Ephesus. I love Celebrity - it's very upscale and has great food (IMO). They are constantly running promotions where you can get a free drinks package, free tips, or free on board credit, or sometimes all 3. Ditto gtkim that sailaway from Venice was amazing. They recently changed the rules for the size of ships that can leave from Venice, due to fears of pollution, but I think some still do it.

(My husband is a teacher, so we are limited as to when we can go on vacation.) My favorite website for booking is Crucon.com, I've been able to find the best deals through them.

I am a HS guidance counselors so we will be going in July. I will check out Crucon thanks. I really want to leave from Rome because i really dont want to spend anytime in Venice. I would like to spend about 5 days before or after the cruise in the Rome area.

Most (all??) cruises that leave from Rome actually leave from the Port of Civitavecchia, just something to keep in mind when booking travel. We were on a cruise that stopped in Civitavecchia and took the train into Rome during our stop. It was a pretty easy (but crowded) trip and probably an hour or so by train. I'd also keep Venice and Athens open as an options.
I know that with a school schedule it is difficult to be flexible, but I try to only book refundable deposits or wait till it is close enough that I can know what flights look like, as flights in July can break the budget really fast.

Yes, I am trying to keep my options open. Rome is my favorite city and I have spent a lot of time there and I want more!!!
For traditional cruises, I also book through Crucon. However, for searching, comparisons, and overview pricing, I use vacationstogo.com If you sign up for their newsletter, you can use their search feature, which is very useful and comprehensive. (I tend to use the advanced search, so I can filter out MSC and Costa, since I'm not a big fan of either.)
