I usually eat a fiber bar in the car. Could be better, but could be much worse, too. I just bought some morning star farms breakfast sandwiches at the store yesterday. We'll see if those are any good..
Plain Greek yogurt with blueberries mixed in and 2-3 scrambled eggs. I try to get a good mix of protein and fat to keep me full with a serving or 2 of fruit. I pretty much eat the same thing for half the year then switch it up slightly.
I eat 2oz of cheese on my walk to the bus (7:30), then a greek yogurt with a tablespoon of jam once I get to work (9:00). Today I splurged on a carton of raspberries as well.
I make egg muffins pretty often. Choose a meat, veggie, and cheese. Add fillings to silicone muffin liners, fill 3/4 full with whisked, seasoned egg. Bake at 375 for 18 minutes or until egg is set. Microwave for :30-1:00 just before you leave and eat in the car.
