Ok, so my BFF's bridal shower is next weekend. It will be at a state park shelter, so relatively low-key and casual, and the meal will be sandwich platters and salads with a mimosa bar to drink. We'll also have chips and guac with other snack-y stuff. There will be about 30 people.
I'm relatively happy with the food and beverages, but I'm stuck on dessert. I asked BFF what her favorite desserts were, and they were all "my dad's apple pie" and "my grandma's raspberry pie" and things like that that I can't really replicate. She did mention that she likes cheesecake, she like chocolate, and her favorite drink is a pina colada. So, I was thinking of cheesecake (bite-sized, or full size? flavor???) and a pineapple bar with a coconut crust. Or maybe a coconut cheesecake with pineapple topping? But then I feel like I'm missing something chocolate-y. Brownies would be an easy fix for that, perhaps. And I also wonder if it will be weird not to have cake there--I'm not a big cake fan, so I would be thrilled, but I feel like most people expect cake for dessert at a shower. But then I wonder if I'm missing cookies. Long story short, I'm overthinking it and going in too many directions at once.
I'll have less than 24 hours to grocery shop and make the desserts and some of the salads/dips, so anything super time-consuming is out of the question. I think I need 3 desserts--I'm not sure 2 will be enough. Thoughts or ideas?
So this is so typical of a Midwestern potluck or picnic, but might do for one of your desserts, plus it's stupid easy:
Cookie salad
1 tub of cool whip 1 cup of buttermilk 1 15 ounce can of mandarin oranges, drained 1 package of instant vanilla pudding crushed fudge stripe cookies - 2 rows
Combine pudding, buttermilk, and drained oranges until fully mixed. Fold in cool whip. Add the fudge stripe cookies just before serving, as they get soggy if added in overnight.

Cheesecake with strawberries on top sounds amazing! Have you ever had lemon bars? Those are tasty! I am a fan of coconut creme pies and lemon meringue.

Right? It's one of those strange concoctions that church ladies make, except it's not the crazy shit like green jello with celery in it.
But it's damn delicious. My family makes it for big gatherings quite a bit.

Interesting. My family makes an orange jello/cool whip/mandarin orange salad that has been lovingly nicknamed "orange stuff" (to distinguish it from "green stuff"--pistachio pudding/cool whip/pineapples/marshmallows). Those types of concoctions are always strangely addictive.
