My husband will get super involved in a hobby, and spend a ton on it, then bore of it and not touch it again.
Past obsessions include paintball and tabletop gaming. While he's into it, he'll spend a ton. We have several $$$ paintball guns and three or four full Warhammer 40K armies collecting dust.
Right now, he's gotten into target shooting, yet he never actually goes. Despite that, I have a $700 gun safe in my basement with three expensive rifles in it.
He's also into computers, and spends a bunch on those, but at least the electronics are consistently used.
Fishing, camping, hunting, shooting, gardening, cooking, golf, poker, and archery. He has a boat and we have quads for the kids and us. We don't budget it for it or have limits. We both enjoy doing stuff and work hard to be able to afford it. I don't even want to think about what we spend monthly on eating out, travel, activities, concerts, etc. We each have our own accounts. He gives me money every week and I pay the bills. It works out well for us.

Hunting and fishing are his main hobbies. We have a small fishing boat that we inherited from his grandpa and he has all kinds of gear for both. I have no idea what he spends on it. He usually takes 4-5 short hunting or fishing trips per year (minimal cost because he stays with family and friends), and multiple day trips during the summer. Now that DS is older, he often takes DS with him as well. He doesn't spend nearly enough time on hobbies and works way too much IMO, so I don't complain about what he does do.
espresso. He just spent 10k on a new machine. I just keep on reminding myself that this is his hobby and at least it smells yummy and isn't dangerous lol. He drinks maybe 2-3 drinks a day and I don't drink caffeine so the costs will never pencil out. He has beans fedexd to him weekly also. It makes him super happy so its worth it.

DH goes to baseball games whenever he's in a city with a MLB team. I don't know how much it costs because he uses his fun money, or per diem if he's traveling for work.

My DH loves sports - he plays in a weekly basketball league and he loves golf. Golf could be expensive, but he often buys deals online. He recently told me he wants a new set of fitted clubs for Father's day, Christmas, birthday eat. That will be $$$
My H doesn't really have hobbies outside of, like, going out for nice dinners and watching TV. And scotch, lol. He likes scotch. He works longish hours, travels frequently, and when he's home on the weekends he's happy just chilling out and spending time with me and DD.
He does have a sporty car that he's pretty smitten with, but he doesn't work on it himself anything like that.

That's just off the top of my head. We each get $100 fun money monthly, sometimes only $75, and he makes it work using that. He actually got into beer brewing just because he gets higher quality beer for cheaper. And equipment is cheap when purchased used.
But we just moved and OMG he has so much stuff. I think 75% of our household belongings are his.
DH free dives and spearfishes and also plays hockey. He plays in a Men's League hockey game on Monday nights, but they start at 10pm so I am usually asleep most of the time he is gone.
Spearfishing/Diving is seasonal (we live in MA) but he typically goes after work once a week, but he brings home fresh fish and lobsters for dinner so I don't mind. He also does spearfishing tournaments on weekends, there are usually 6 a season and they are usually on Saturday's. He dives other weekend mornings but goes very early and is usually back by noon so we can do something that afternoon.
His spearfishing stuff is $$$ and he has a lot of it. Also hockey gear smells. Beyond that I like his hobbies.
Dh cycles. There is probably close to $20K in our garage due to this "hobby". It keeps him sane and he is good about saving up for things/new bikes he wants.
My husband's hobby is having hobbies. It's a running joke at this point. Brewing beer, leatherwork, smoking meat, woodworking, carpentry, building shit, hunting, swimming, metalworking, knife sharpening, cutting down trees and cutting wood, researching things that he wants to buy someday....
A lot of stuff goes towards our house/building, so it's not exactly blowing money, but some is expensive. I'm still bitter about his handmade $250 leather duffle bag. Otherwise I'm really impressed by how handy he is. He pushes me to try and do things I wouldn't have attempted. We have fun.
DH is into cars, video games (acquiring, not so much playing), and t-shirts. None of which he has time for or can wear to work.
He has an insane amount of car related tools and equipment, I don't even want to consider how much he's spent on that. We have 4 cars, 3 are his (one daily driver for commuting, a 1955 Plymouth Belvedere, and a Cadillac CTS-v that is mostly just for the track that he never goes to). It's absurd.
ETA: Oddly, for an IT person, he is not that into having computer related equipment. I think he gets his fill through work.
His hobbies are running, biking, lifting weights, and craft beer.
He has three bikes that were $$$ but other than that, he doesn't spend much on his hobbies. His beer is part of the grocery budget, and running and lifting don't cost anything.
Signing in with the H with the most expensive hobby: flying.
He is so completely in love with it that I have decided you only live once and have agreed to $500/month going toward it, plus a percentage of his bonus can be saved toward eventually buying a plane. I just pretend we make $500/month less than we do so that I don't feel sick about it.
I told him I am the best wife ever and he better not forget it.
DH used to have a boat and a Harley. We made the decision last year to sell all of our "toys" so we could put more money down on our dream house. We sold the boat, motorcycle, and my fancy suv, and got a nice chunk of cash to use towards down payment and decorating. Bought our dream house, and 6 months later DH surprised me with a new fancy suv lol
Our next toy will be a convertible. I'm thinking that's 3-4 years away. We currently have a stupidly high car payment, so when we get that paid off, the plan is to just roll that money right into a convertible payment. He wants a Mercedes and I don't care what it is as long as the top comes down and it fits 4 people!
Other than that, DH likes big tvs (we have a 65", a 58", and a 42" in the bedroom) and cigars. No other toys or hobbies and I'm happy with that!

He is a competitive cyclist so he spends 20 hours a week on his bike. Our grocery bill is off the chains because he usually burns about 3,000 calories a ride. His parents pay for the bike and all supplies. But it's still 1K a year in entry fees. I don't begrudge the money or time (mostly) but I do always worry about cars. He chooses country roads and his inside trainer--but road biking is scary.
He also reads all the time, watches tons of sports and like other DHs in this thread--he really enjoys budgeting and being frugal
I don't really know if he does have a hobby. He is very into football but he doesn't play anymore. We have NFL season tickets but we go together so I don't consider that "his" thing. He like spending time with DS and me, and doesn't make much of an effort or care about guys night out or anything. I handle our social calendar!
Luckily my H's main hobby is finance, lol. He invests and has various accounts for retirement(which I have zero interest in), but is always online trying to figure out ways to get deals on things. This works well with my love of travel. He figures out ways to travel at ridiculously discounted rates. The amount of time he spends online researching these things is annoying, but we are a lot better off financially because of this hobby.
DH has lots of cars, lots of motorcycles, lots of tools and machinery for working on cars, several trailers for hauling his collection, etc. he also had a Ranger, snow mobiles, etc. DH also travels to exotic places to indulge his love of anything with a motor. I would conservatively say he spends $30-40K on just his own hobbies every year and it could be double that if he buys a new car to fix up. This does not include the $165K humidity and temperature controlled 3 story garage we had to build to hold all his crap.
