I'm hosting a 4th of July BBQ at my house. We think from our rooftop we will be able to see all sorts of fireworks.
So I need to prepare things for it and I need a bit of help with a fish/crab item. I have a pescatarian coming and I want to make sure that I have something for her. She is a terrific host when I am at her house and so accommodating for everyone.
Here is the my menu at the moment. I feel like I need a few things. Any ideas are welcome.
Mains- Pulled BBQ Chicken sandwiches Fish/Crab item (?) (I don't have a grill so I am trying to have stuff I can make ahead my kitchen is 2 floors away from the roof deck)
Wagon Wheel pasta salad Potato Salad (something else?)
Caprese salad skewers (marinated Mozzarella, fresh tomato and basil) Hummus/with vegetables variety of good cheese/crackers misc chips
desserts (TBD)
White Wine Sangria with fresh fruit Water soda Beers

Can't go wrong with crab cakes. But you could also do a salmon burger or cook some salmon in a low (like 200 degree) oven--Jacques Pepin has a recipe somewhere.
Time to admit this: I'm a fairly good cook but I've never cooked shrimp. I've made lots of other things, but not shrimp.
They cook really fast. You don't have to skewer them, you could just toss them with the marinade/seasonings, throw them on a baking sheet and bake them for just a few minutes. My favorite way is to saute them, though because it's easier to see when they're done (barely opaque on both sides). They cook in like two minutes, seriously. Once they're opaque get them off the heat!

I like the ceviche idea, but I've never made it, so I don't have a recipe. Shrimp cocktail would be another good way to round out your finger foods that's pescetarian-friendly and easy for you. I'd add a fruit salad, too. I love fruit in the summer!
