Does Hamburger Helper count? I love Cheeseburger Macaroni HH with cayenne pepper. My H just made some tonight because it's raining and he decided we needed comfort food.
GINGER - do not try lightened up versions of cream of crap, that defeats the entire purpose!!
OH I AGREE!
But my very TINY Husband thinks he is FAT, and as much as I try to tell him it's WAY better to eat smaller portions of full fat whatever, he is still stuck on Low fat crap.
And I love him. So I give in to his crazy notion.
Exihibit A (I guess TECHNICALLY he's overweight medically, but fuck that shit. He's perfect):

Boil 2 chicken breasts and cook 1/2 package of broccoli florets in the microwave per instructions. Dice chicken and mix chicken and broccoli in bottom of cooking pan. Add 1/2 package of shredded mozzarella, and spread 1 can of cream of chicken soup on top. Make about 3 cups of stuffing on stovetop per package instructions, and top casserole with stuffing. Bake at 350 for 45 minutes.
Hisno must be rolling over in her grave at these "enchilada" recipes.
She knew a guy who rolled over in his grave so hard that the coffin shifted over 10 feet to the right, into a vacant plot, and it was discovered when they were digging the grave for her great-great-great-grandfather and found the plot mysteriously occupied. Four generations later the family still gives all the first-born males the middle name Rollo in his honor.

I made enchiladas with cream of chicken, but in fairness, I do call them "Midwest enchiladas" lol. It's similar to that all recipes link above.
I also make Easy Chicken Divan which is some recipe my mom got from her friend in the '70s and it's so delicious. I'm terrible with actual recipes, but it's roughly:
Chop up two or three heads of broccoli and steam. Cook two large chicken breasts and shred or cut into chunks. Whatever fits in your dish. Place chicken and broccoli in casserole dish. Make a sauce of: One can cream of chicken soup Big scoop of mayo Squirt of lemon juice Teaspoon? Tablespoon? Of curry powder. Pour the sauce over the chicken and broccoli and top with shredded cheese. The original recipe is lay kraft slices over the top and sprinkle with breadcrumbs. Bake at 350 until bubbly.
I grew up eating casserole made with cream of mushroom. Browned ground beef, macaroni noodles (cooked) mixed with COmushroom and a little milk then baked for like, 15 minutes or so. H hates COmushroom, though, and it's just not the same with COcelery. I miss it.
Chicken, COchicken, pepper jack cheese (you could use any type) milk, butter topped with stove top, bake and serve over rice. We usually add a little bit of hot sauce too.
