Boiled new potatoes, a pound of bacon, green onions, apple cider vinegar, Dijon mustard.
Cook the bacon until it's crisp, reserve the fat, mix it with the acv & mustard, pour it over the potatoes, bacon and green onions. Salt & pepper, then shove it in your face.
I use red potatoes (skin on) or golden potatoes (no skin). I learned my salad recipes from my nana. Finely chopped onion and celery (or celery salt),splash of vinegar, lots of mayo, kosher salt and black pepper. I also like to add fresh dill if I have any.
4 or 5 pounds of boiled potatoes, half a chopped onion, one chopped tomato, one pound of bacon cut into pieces, 3 hard boiled eggs chopped up, a couple of tablespoons of miracle whip and salt and pepper.
That is how MIL makes it, and at first I thought it was odd, with the tomato and bacon, but now I love it.
My current favorite is 4lbs potatoes, 1c mayo, 1c sour cream, 1.5c chopped celery, a bunch of diced green onions, 5T chopped fresh dill, 2t powdered mustard & salt to taste.

Oh, I forgot about celery. I looooooove celery in potato salad.
I only like my mom's potato salad. Lots of yellow mustard, pickles, hard boiled eggs, red onion, some mayo, and some pickle juice. And lots of black pepper.
I have yet to meet a potato salad other than my mom's that I like. Most have too much mayo. And sugar. Who the fuck puts sugar in potato salad? That shit is unacceptable.

Boil potatoes. Marinate them overnight in Italian dressing. The next morning mayo, a tiny bit of mustard, celery, dill pickles, celery seed, dill and paprika. My mom adds hard boiled eggs too but I hate eggs.
I boil diced potatoes and then mix with celery, onion, minced garlic, bacon, mayo, sour cream, and salt and pepper. It's more of a baked potato salad as far as topping go.
Boiled potatoes, still hot. Mayo, enough mustard for color. Sometimes paprika. Salt, pepper, chopped boiled eggs. Then either chopped pickles or our favorite green olives. Serving it hot is the key.

Mine has a basic method although it's never the same way twice. I prefer Yukon golds but have used other potatoes. Cooked from cold to perfectly tender. I sprinkle the hot potatoes with vinegar and add them to the hot, drained pan to steam off any liquid.
I add celery, egg, fine diced onion or green onion, and sometimes dill pickle.
Sauce is Hellman's mayo cut with a little yogurt or sour cream, some deli mustard, sprinkle of sugar, dill from my garden, salt and pepper.
Not gonna lie, I'm semi-potato salad famous. At least it gets assigned to me at some parties.
A friend of mine made a version a few years ago that I stole and use exclusively now. She used purple potatoes, arugula, shaved parmesan, bacon and mayo. It was fabulous.
