I skip chili powder entirely if I want to cut the spice. Cumin, salt, pepper, oregano, cinnamon, smoked or regular paprika (depending on what I want). Maybe little allspice. I saute onions and add actual garlic rather than use powdered.
I don't measure, but I use oregano, garlic, onion powder (or diced onions), cumin, paprika, chili powder and salt. I usually use several very heavy shakes for everything, but just a light dash or two of chili powder and salt.

I've been on the search too, my boys suddenly deemed our old seasoning too spicy. But I'm determined to fix it because it's one thing they happily eat with no fights!

Sazón Goya with coriander and annatto. Not spicy at all. I also add one of their bouillon cubes/powders to the beef along with garlic and chopped red peppers and onions. The kids love it.
One time, we went to make tacos and thought we had an Old El Paso, but we didn't. My ex decided to just add seasoning to the meat, and it was horrible. Give me the fake msg packet lol

Alton Brown's Taco Potion #19. Mostly because it makes me think about the Love Potion #9 song, except with tacos. I'd just leave out the cayenne and maybe decrease the chili powder.
