Tossing around the idea of staying in LBI near the end of the month, just for a night or two. I live near Newark so it's not far. I don't really care what area of the island, but when I was young my family always stayed in Beach Haven.
Any suggestions for a reasonably priced place to stay? Any kind of accommodation (motel, B&B, VRBO) is fine as long as it's clean. Ideally under $200/night. A lot of places require a 3-night minimum but I don't want to take time off work. I know it's peak season but I'm hoping we can get a last-minute deal or find a hidden gem.

My parent's place is small, so we typically get a hotel room to make sleeping arrangements easier now that we have the kids. You're right, the pickings are slim, and most require an advanced reservation and 3 night stay. I honestly can't think of any place that fits your paramenters.
We normally stay at the Seahorse Motel in Brant Beach, which is about $250/night and requires a 3 night stay (and we reserve in February/March for the summer). They rebuilt after hurricane Sandy, so it's not as shabby as it used to be. Like most LBI motels, it's adequate, but nothing special.
Daddy'Os is nice hotel, but more like $350-500/night (and most likely sold-out for the season). The restaurant is really good for food and drinks, so I'd recommend going there for dinner.
Your best bet might be to look for a VRBO type rental. I've never done that, but you might have better options given how popular the concept has become.

Oh, and for casual lunches/dinners the Greenhouse Cafe is good.
The Sandbox Cafe in Ship Bottom is my favorite breakfast spot. I'm getting hungry thinking about their fruit creeps. Worth the drive over if you end up staying in Beach Haven.
If you don't mind reporting back, I'd be curious to hear where you end up staying.
