I came home from work early today and H and I are starving so I'm already making dinner, even though it's only 3:30. I feel like an old lady eating so early. We're having baked tilapia, rice, and broccoli. Nothing fancy, but easy to make and tasty.
What are you guys having?
Also, I want to make a shit load of crock pot meals this weekend in gallon zipper bags so I can throw them in the crock pot in the morning before work. Do you have any favorites?
I have no ideas for dinner tonight. For the crockpot I like the balsamic pork roast on Skinnytaste. I sub black pepper for the chili flakes so the kids will eat it. I also like the maple Dijon pork chops on eatliverun.com

Crock pot things I like -- Skinnytaste's crock pot santa fe chicken and crock pot picadillo are my favorites.
When you say you put them in freezer bags.. do you put raw meat in with the veggies and freeze them..? I am intrigued.
Well, that's what I have seen online, yes, but I've never actually done it. I've never done any kind of meal planning, TBH, and want to change that now that I work normal people hours. I'm googling now, actually. I've seen them layered in freezer bags, you take it out the night before and just dump it in the crock pot.
I plan to hit the gym after work and H is getting a haircut, so dinner will be something easy. I think he's going to have leftover spaghetti from yesterday. I may just have something small.

I made an experimental paste of basil, mint, chives, garlic, dry corriander, cumin, and tahini rubbed under the skin of chicken thighs. I'm going to roast those, Yukon golds, and zucchini.

I've had better luck prepping and freezing just the veggies and spices and then adding fresh meat on the cooking day. The texture and flavor are a lot better and it doesn't really take much effort to dump the meat in day of vs freezing it.
