Now that our kitchen is almost done, we're re-thinking how we store for scraps. We had a small can that sat on the countertop, but I'm trying to find a way to store stuff under the sink that won't smell to high heaven. What do you do?

I can't speak from experience because we haven't started our compost yet, but our plan is to use our old small stainless pail with charcoal filter and a wetbag. It's been in service as a diaper pail and handles smell pretty well, so I'm assuming it will be ok for compost. I could be very wrong.

We just have one of those standards green bins that looks like a mini city compost bin. Has a charcoal filter on top. Keep it under our sink and dump it when it gets full.
We have a silver compost pail with a charcoal filter in the lid and use the green compost liner bags. I have had friends who use a large lidded plastic bowl and they keep it in the freezer to keep down any fruit flies or odors.
I do have worms, which reminds me I need to feed them They live outside until it gets too cold and then they live in a corner of the kitchen. They don't smell at all and I've never had a problem with bugs with them but you can't use meat,dairy,onions, greasy or coated papers, limited citrus (or things that don't break down easily like avocado skins/seeds) but bonus is you get nice worm castings to use on your garden.
