If I were pregnant and invited to a kid's party as a childless (well out of the womb child) adult, I WOULD FUCKING HULK RAGE all the way home to my husband, lol. And then make him stop at Costco to buy me a full sheet cake so I could eat by my damn self.

In my experience cake is always offered to adults but almost no one takes it. I love cake so I always have a piece but am often the only adult eating it. Maybe that has been the past experience of your hosts so they stopped buying extra?
But that implies there is such a thing as too much cake, which does not compute.
I would be pissed. Unless they offered me booze instead. Then I would be less pissed, but still annoyed. Especially if it was good cake.

The last party we went to they had a huge sheet cake with lots leftover and didn't cut or offer any cake for the adults. They are huge fitness people who eat perfectly so I didn't think it occurred to them that other adults might want or eat cake. The dad also sounded like he was just going to throw the rest of the cake out because they wouldn't eat it at home.
I don't get this at all! As PP said cake is the easiest/cheapest part of feeding party guests. Buy a big cake, serve it to everyone, and give away leftovers if you don't want it around the house.

There was a WHOLE EXTRA CAKE that they didn't cut

Kids get cake first and then there's usually cake leftover that is offered to the adults to take a piece.
This is what happened at the last couple of birthdays we have been to. Most adults decline the cake anyways. I always make sure there is enough cake for everybody, if there are leftovers that is just a bonus for me.

It was touch and go. Only about 18 cupcakes out and well over 40 people in attendance, approx 15 kids. After singing they said "all the kids can get a cupcake!" Luckily they had more cupcakes and I had a delicious one!
Since my kids are both under dropoff age, I always have enough pizza and cake for kids and adults. I also always have veggie platters, chips, hummus and soda for the adults while the kids are doing whatever activity its is.
This seems to be the basic model where I live. I would be upset if I had to watch everyone else eat cake!
That's the same where I live, too. I can't imagine only serving food to half of your guests.
