We had some really good meals when we were in Cusco last September. I know you said you'd be eating at Astrid y Gaston in Lima but Acurio has another restaurant in Cusco too (Chicha) that's more casual/cheaper and really good. It serves food from all throughout Peru. Those 3 in Lima are amazing. Lima is one of my favorite food destinations ever. I also enjoyed La Mar and Huaca Pucllana in Lima. We only ate in Cusco one night since we were staying in another town and I can't remember where it was.

I'll second Inka Grill. We had a great meal there. I had alpaca and my H had guinea pig.
I can't remember any of the other places anymore. We stayed off the Plaza de Armas and didn't venture too far from there for meals. We ate at a few other places on the square, and all of them were really good. We're not foodies by any means, but Peru had some of the best food we've eaten anywhere.
Now that I read these recommendations from others I ate at Inka Grill in Cusco. It was good.
I also had our tour guide stop on the side of the road and we ate a guinea pig cooked on the side of the road and had homemade chicha. Apparently I was feeling adventurous with my eating.
