We tried blue apron family plan and tonight I cooked my first meal. I suck at cooking and I HATE it. I wish the stuff came pre chopped. I know I sound ridiculous, but I'm really not used to cooking! It was very stressful for me. How on earth do you amazing people do this every day!!?!? No, really, tell me how you do it.

Honestly, it just gets easier and you learn to prep when you have time. Like today, I roasted my brussel sprouts from 3:30-4:30 because I had time then to watch them. And then later I only had to concentrate on my salmon.
Um, practice makes perfect? Seriously, I've made (and eaten) some first class kitchen disasters. It helps to make a couple of things over and over until you can knock them out with confidence. Then use those skills to branch out to similar recipes. I've been cooking for years and there are still things I can't get right-- pork chops come to mind :-)
I mean I cook because I have to. I do real simple stuff and like to make enough for 2 meals if possible. Or use the crock pot. As much as I dislike it things just go better if there is a meal planned and not scrambling to figure something out. Clean as you go helps whenever possible too!
That looks delicious! I do most of my prep/chopping at night after the boys are in bed or ahead on the weekends if possible so that all I have to do is throw it all in a cockpot/grill/stove/oven. I love to cook, but hate it when I'm under a time crunch or am trying to do it solo with both boys. We eat a lot of sandwiches when my H is traveling.

Frozen veggies that are pre-chopped when possible, and my mandolin for fast prepping of fresh stuff. I also try to do stuff ahead of time if I can. If I can get stuff done while Andrew is napping, then all I have to do at dinner time is cook it/put it all together. It also helps keep my kitchen from exploding in mess.

It would have been much easier if I didn't start prepping right as I was about to cook. Both girls were hungry and cranky and I was chopping an onion and I wanted to cry more than just onion tears.
I usually cook really early so I have the night to relax. I'll put the meal in the oven on keep warm if I need to. Meal planning and prepping helps a lot too. When you are ready to venture out from blue apron, look for one pot meals. It will get easier!

I'm the worst at this too. Cooking 3 meals a week is probably my record. It's always like a bomb went off. And it's so frustrating when it takes forever to make something and then they don't eat it!
I think you should be really proud of yourself! That looks amazing and delicious.
My kitchen is a perpetual disaster. I am no help there. I clean it about 6 times a day. Doing Crockpot meals is a big help in the messiness area and makes dinner time a whole lot easier.

All of this. Also I ideally cook a whole bunch of meals on Sunday when my H is home to entertain the kids otherwise I have to wait for the nights he is home. I can't concentrate on stuff with them under my feet.

I despise cooking but have to do it, especially when H is in volleyball season. He loves to cook, so I let him when he's around.
I'm really working in prepping some things on Sundays to make it easier during the week. Like I'll chop up veggies for a meal and put them in a container in the fridge, or measure out some of the spices I'll need into small containers. I figure if I spend an hour on Sunday doing that, my week will go so much better. I also cook a lot of frozen veggies and often don't have a side like rice or pasta because I'm lazy.
I find cooking relaxing but only for about 40 min lol I hate meal planning and chopping. I buy a lot of pre cut veggies and take short cuts wherever possible that meal looks great!
I don't mind it if someone else chops for me but I'm SO SLOW at prep. It takes me forever. DH can cook gourmet meals without recipes while I screw up even with recipes.
