So next week is the beginning of graduate school for me- I'll have class on Tuesdays and Thursdays from 5:30 to 8:15. I work until 4:30, so my plan is to go straight to school after work. My plan right now is to eat "dinner" before class starts, and have some kind of a snack that I eat during break (we get a 10 minute break halfway through class).
So, what ideas do people have for easy dinners I can bring with me? I have access to a refrigerator at work, so I can keep things cold and there is a microwave in the student lounge so I can heat things up if needed. If all else fails, I can just bring a lean cuisine or something with me, but I'd prefer not to do that all the time. I don't follow any particular diet (I try not to eat a ton of carbs, but not low carb by any means) but I'm still working on my weight loss, so I'd like to keep things reasonably healthy

I'm trying to remember what I used to bring when I was in school at night...I know I'd do salads, often with grilled chicken. Since you have a microwave, can you just cook a double meal the night before and bring leftovers?
For lunch pretty much every day this summer I would make a wrap using the flatout tortilla wraps and add in some roasted red pepper hummus, turkey, and some spinach. I also like to make a big batch of quinoa and add in chicken, salsa, and black beans that I make in the crockpot.
