I'm going to the store later and need some inspiration. I usually do the same few things (chicken, tomato, cucumber, some kind of cheese) but it's getting a bit boring.
My usual salad is some kind of mixed greens, topped with bell pepper, cucumber (English cucumber, I prefer them), tomatoes, and carrot. Then I toss around other options like zucchini, summer squash, leftover protein from the night before (ie marinated grilled chicken, roast beef or pork, etc...). Some feta, if I have it. Nuts occasionally, but they are high in points, as are dried fruit. Sometimes I will add some fresh fruit - diced apple is a particular favourite, berries, too, but we are past most of the prime berries here...
I vary my salads by the seasons: My favorite salad at this time of year is arugula. peaches, cherries, toasted walnuts and white wine vinaigrette I also like tomato pecan: Red tomatoes, yellow tomatoes, green part of scallions, toasted pecans in a balsamic vinaigrette When apples come into season, I like spinach, romaine, apples, cucumber, toasted walnuts in a ranch dressing. Because I sometimes go overboard on size, I try hard to focus on healthy ingredients. When I have the office salad bar at my disposal, I use a bed of baby spinach, kidney beans, blueberries (weird, I know, but they're great with the savory stuff), roasted carrots, and grilled chicken. Every now and then, I add banana peppers. I love almonds, raisins, sunflower seeds and other things like that; but I usually avoid them, because the calories add up so quickly in the quantities I prefer.
At home, I still use spinach and grilled chicken, but I tend to skip the beans in favor of reduced fat shredded cheese, spices, and peppers (usually red, sometimes orange, yellow, or green). I'm lazy and consider them easy to chop; also, they keep well if I only use a portion of one and don't go back for the rest until later in the week.
Oh, yeah. I tend to make my own dressing. Typically it's a combo of red wine vinegar, olive oil, mustard (it's a good emulsifier, though you could use honey or agave or a few other sorts of things instead), and then spices. For those I go with a bunch of Italian seasoning, add extra oregano because I like it, some cumin, salt, and pepper. And garlic. You can use fresh, minced, or powdered. I usually go for powdered.
