Very smart! I accomplished this type of thing exactly twice in my life, both times when I was "nesting" late in pregnancy. I filled our freezer with enough food to last for months, lol.
Now the best I can do is parboil some extra bratwurst once in a while.

I think you're going to be set until 2016! Hey, whatever you need to do to stay on the healthy eating track is worth it. I know we do way too much takeout during the week.
I made soup tonight that turned out super well. I'm thinking about doing another batch this week to freeze. It was a crock pot thing and no effort.

I found some taco soup thing on Face Book the other day, and am going to make that too. It's like a dump cake only its soup. A can of this, a can of that, an envelope of seasoning, a pound of meat etc.
That's basically what this was. I didn't use a recipe, but it's not unique.
1 can corn, drained 1 can black beans, drained 2 cans fire roasted tomatoes 1 small can green chiles 1 bag frozen mirepoix (onion, celery, green pepper) 2-3 cups chicken stock 1 packet taco seasoning salt to taste 2 chicken breasts
Stir all together, then place two large chicken breasts in the soup. Cook on low for 6 hours. Remove chicken and shred, then add back to the soup and serve with accompaniments (avocado, shredded cheese, sour cream, tortilla chips, etc.).
I would split the beef in half and do beef and noodles, and vegetable beef soup. For my veg soup, I add a bag of frozen corn, frozen pea/carrot mix, 2 cans of green beans, a handful of shredded cabbage, and a couple of cubed potatoes. Oh - and a can of tomato juice. Then, when I heat it up, sometimes I throw in some barley if I want to stretch it.
Chicken taco soup is another good, easy one.
Chicken Taco Soup
1 pkt Ranch mix 1 pkt Taco Seasoning 3/4 cup water 1 can Rotel 1 can diced tomatoes 3 cans beans, rinsed well (I use 1 black, 1 red, 1 great northern) 1/2 bag frozen corn 2 chicken breasts
Throw it all in the crockpot. When you get home, shred the chicken and throw it back in. Serve with tortilla chips or crackers. Slightly spicy, warm and delish!

Please come to my house tomorrow. I'm leaving on Thursday for five days and I'm afraid H and the girls will live solely on Totinos pizza, fruit snacks, and juice boxes.
What kind of containers do you use? I really enjoy cooking and it's kind of my decompress time when we get home, but there are always those days where adulting is hard and dinner should make itself.
This is awesome! I've been trying to do some too to be more efficient. Sunday I made a batch of bolognese, and two lasagnas (one to eat one for the freezer), so I have 5 meals worth of sauce. I also did two bags of crockpot freezer fajitas, and will do freezer crockpot stew next weekend, and also chili. And the other nights I'm trying to do sandwiches or salads. I'm working hard on getting rid of my greek mom "must cook a hearty meal every day" guilt.
