That's a tough one! No beaches?!? There are plenty of ruins to visit- Tulum (which is on the beach), Coba, Chichen Itza. I think you can still climb to the top of the one in Coba.

I don't remember exactly how long our trip to the Yucutan was (back in 2007), but around a week and no beaches. We went to a ton of Mayan ruins. The best is Kalakmul (sp?). It's pretty far from Cancun, but was amazing. We pretty much planned our whole trip around what we could see on the way there and back, driving from Cancun. We went down the coast, and back inland.
You could easily hit some of the smaller Zonas Arqueologicas in the Yucatan.
Normally I would suggest a trip to Palenque with a day trip to Agua Azul, Misol-Ha and Agua Clara but you might not have enough time for that. You would spend most of your time just driving there. If you wanted to fly you can easily reach the city of Palenque by flying into Villahermosa; it is a few hours drive from the airport.

I would still stop in Playa del Carmen because the downtown is so cute. Great for walking, people watching, restaurants, and shopping. No need to do the beach.
We had tortas, tacos, & batidos at Tres Marias in Cancun. It's right near Coco Bongo in a little alley. It is a cheap hole in the wall and was one of the best tortas I have ever had.
