I basically only cook with a crock pot and we are a bunch of picky eaters. Here are some of our favorite recipes. They are pretty easy to modify based upon your preferences. You can also combine all or most of the ingredients in a freezer bag to freeze, then pull them out later and throw them in the crock pot.
Chicken “Pot Pie” • 2 pounds chicken breasts • 1 small yellow onion, diced (one cup) • 2 large potatoes, peeled and chopped • Bag of frozen mixed vegetables (carrots, corn, green beans, and peas) • 1 cup chicken broth • 1/4 cup flour • Salt & Pepper Combine in bag to freeze, or put in crockpot. Cook on low 6 hours. Add 1/2 cup heavy whipping cream during last 10 minutes. Serve with biscuits.
Cheesy Chicken Tatertot Dish • 1 (32 oz.) bag frozen tater tots • 1 (3 oz.) bag bacon pieces • 1 pound chicken breasts • 2 cups shredded cheddar cheese • 3/4 cup milk • Salt & Pepper Combine in bag to freeze, or put in crockpot. Cook on low 6 hours.
Crockpot Honey Chicken • 1 small onion, diced • 2 cloves garlic, minced • 1/2 cup honey • 1/2 cup soy sauce • 1/4 cup ketchup • 2 tablespoons vegetable oil • 1/4 teaspoon crushed red pepper flakes • 2 pounds chicken breasts • Salt & Pepper, to taste Combine in bag to freeze, or put in crockpot. Cook on low 6 hours. Can serve with rice (can add rice to crockpot towards end).
Crockpot Pepper Chicken • 1 pound chicken breasts • 1 medium-sized red bell pepper, sliced • 1/4 cup extra virgin olive oil • 4 large garlic cloves, minced • 1 small onion, diced • 1 teaspoon crushed red pepper flakes • Salt & Pepper Combine in bag to freeze, or put in crockpot. Cook on low 6 hours.
Hawaiin BBQ Sandwiches • 1 bottle of BBQ sauce • 1 can of pineapple chunks • Pork or chicken breasts Combine in bag to freeze, or put in crockpot. Cook on low 6-8 hours. Serve on buns.
This is always a hit in my house (and my kid eats NOTHING):
4 boneless, skinless chicken breasts salt and pepper 4 slices swiss cheese 1 can (about 14 oz.) chicken broth 2 cans (10 1/4 oz), condensed cream of mushroom, celery or chicken soup (undiluted) 3 cups packaged stuffing mix 1/2 cup of butter (1 stick)
place chicken in crock pot (half the time I forget to defrost and it goes in either half defrosted from the microwave or not at all, and it's fine). Sprinkle with salt and pepper to taste. Top each breast with a slice of cheese (I've used american and cheddar in a pinch, both were just as yummy). Add broth and soup. Sprinkle stuffing over the top. Pour melted butter over it all. Cook - high 3-4 hours or Low for 6-8.
you might want to spray the crock pot with some cooking spray before you put everything in, it tends to get gunky around the sides and on the bottom and can be hard to clean. but the meal itself is a picky child approved one in my house.
There are tons of easy crockpot recipes out there if you google. Also, remember simple things like pancakes or eggs for dinner, grilled cheese sandwiches with soup, bagged salad mix with grilled chicken or shredded rotisserie chicken.
And don't feel bad if you get some frozen stuff that's easy to prepare, like chicken pot pies or soups.

Easy pot roast
Quarter an onion, spread in bottom of crock pot Then a little bag of red potatoes Bag of carrots. Big ones- I don't even peel usually Nest a Roast (I prefer eye of round at Costco, lean and cooked roast freezes great) Sprinkle some garlic & onion powder on the meat. Salt & pepper. Then two packs of Lipton onion soup.
Splash some water in (1/4-1/2 cup-ish)
Low for 6-8 hours depending on how big the roast is.
The meat & au jus freezes great but I eat the carrots/potatoes the first round.
Side is usually rolls or crescents and a can of green beans.
For the crock pot add any cheap meat (they are tougher but stand up to long cooking better), some kind of sauce (bbq, soup, broth with sour cream added the last twenty minutes, gravy), whatever vegetables you will eat(tubers are best for me it's turnips since I'm intolerant of potatoes) make at least one colorful for plate appeal. You can add pasta the last hour or so of cooking so you do not dirty a pot. Beef stroganoff is really my go to crock pot recipe.
Remember it does not have to say "crock pot" to be cooked in one.
I also but Voila frozen meals, all you do is add a little water. My mom used to make chili Mac and Mac nac. Chili mac... Cook kraft Mac n cheese, add a can of Horel and serve (I use generics). Mac nac Cook macaroni, add a can of diced tomatoes and ground beef. To simplify seasoning it I buy the can of Mexican or Italian diced tomatoes.
