We're facing a kitchen gut job within the next year or so. I dream of having an eat-at island. My husband travels a ton and it would be so nice for now and even in the future to be able to feed my girls at our island instead of at the kitchen table. The kitchen shape is not going to change.... right now we have a long, thin rectangular island with the cook top in the middle and eating could only be at the end. The island cannot go wider. That's probably not going to change. I think my only option is to extend the island and add an over hang where I could maybe get 2 bar stools. I'd really like to seat three.

What about something like this so it isn't as long as two at the end but you can get three chairs on the end. I feel like this is a nice compromise between two and three.

Alright, these are super old pictures but not much has changed. The entire room will be gutted. Nothing staying. New flooring, cabinets, lighting, everything. My current vision is creamy tile, creamy cabinets with a darker wood island with some sort of seating. I do like the functionality of my kitchen. It works. But I am totally open to suggestions.
The door to the left of the frig is the pantry. Past that is another walkway that mirrors the one into the dining room.
Is your cooktop staying on the island? Are you set on having an island, or just a breakfast bar? What about taking the island out and extending the counter 90° between the kitchen area and the table?
I worry that once you have people sitting at the island counter, you wouldn't have comfortable walking space near the sink and/or fridge.

Well shoot, you're a genius! I hadn't though of any of that. I am not necessarily set on anything. Right now the layout of the kitchen works. I really have no complaints except I really really want a breakfast bar! But where would the cooktop go?
If it's all going, I'd just get a regular stove built in instead of a cooktop, so you'd have the entire island to do whatever you want. That's not hard to do with new cabinets at all.
I do worry about the walking space, but i like option 2 a lot. I think it's fun! And you could far enough out with that it won't affect your workspace.
I re-did a long narrow kitchen years ago. Older house, second floor so changing the footprint wasn't doable. I farmed it out to two different certified Kitchen/Bath Designers and neither was able to make an island work in the space.
I would have been able to do a peninsula. TBH, the island in your current set up makes getting from the sink to fridge an obstacle course. I'm not a fan of cooktops on a narrow island where people are walking through. It's an accident waiting to happen.

I agree with this. I'd actually get rid of the island completely and do a peninsula/breakfast bar between the kitchen area and the table.
