We are living in Amsterdam. We've only been here about 3 months and haven't had a chance to travel much yet. We are headed back to the US for Christmas, but my kids have a week off school in February, long weekend at Easter, and spring break in April. Ideas for good places to visit during those times? Although we would love great weather, we know that we won't find anything like a hot beach vacation during those times (unless we travel much further, and with two little kids, we'd like to minimize jet lag). We would settle for decent weather, low crowds, easy to travel to from the Netherlands.

I love Prague in the winter - it can be absolutely gorgeous in the snow. But it's also nice in the spring. So, if you want nice weather, I'd go there in April. If you want nicer weather in Feb, then perhaps consider southern Spain or Italy, perhaps Morocco or Greece. For the long weekend of Easter, I'd go closer so you don't have too much travel time and head to France or Germany.
How old are your kids? Amsterdam is a great location for travel, you get so many direct flights. You'll obviously be travelling at the same time as everyone else with kids, so it's worth looking to book things early. It might even be worth working out what countries have different school break times and heading there! I've always loved just basing my travel around flight prices so checking skyscanner and seeing where we could fly cheaply and then building a holiday around it.
Prague is one of my favourite places ever. Gorgeous and affordable and just lovely. Edinburgh is great for kids though I'd recommend it for Easter/April time as opposed to February (February can be really depressing!). It's an easy flight for sure. Barcelona looked great for kids - a beach right there and tons of playgrounds, really flat so great for walking around all day (I actually went without my daughter but it seemed really good for walking-age kids).
Some of the Spanish islands might have hot weather by April. We were in Southern Spain in October one year and it was warm enough to go to the beach so I'm sure the islands would be even better. There are some gorgeous Greek islands (though I think most of the ferries start running in May? That sounds familiar to me) but in case you'll also have time over the summer.
H and I went to Sicily in March, and it was already 20C most days so I bet it was even warmer in April. Malta or Greece would have warm weather in April as well.
