I need to bring a dessert to Thanksgiving at MIL's. I am driving in Wednesday night and will not have much time to cook on Thursday, so I need something I can throw together. They already have pumpkin pie.

Apple cake! I have made this - just the cake, without either of the toppings - and it is amazing. I subbed Greek yogurt for the sour cream. I'm sure it would be great with topping, too. I've also made it with pears. I'm doing it for Thanksgiving with pumpkin. An easy, versatile, not-too-sweet cake.
Either an apple crisp, or I might even just do rice krispie treats. Not super traditional, but some people will probably appreciate a light-er dessert if they've over-indulged and have no room left but still want dessert. lol
I make a pumpkin cake batter dip. I use 1 package of pumpkin muffin mix ( you can also use white cake mix and add pumpkin pie spices ) 1 cup of vanilla greek yogurt, 1 15 oz can of pumpkin and 2 cups of cool whip. Blend first three ingredients together and then fold in the cool whip. Serve with graham crackers, apple slices and nillas ( or gingersnaps) for dipping. YUM YUM.

You could do a trifle. Just bring the ingredients and assemble it there. Layers of cake and pudding and maybe some fruit or chocolate or something. If you want to bring something already done, bread pudding is easy and can be served warm or cold.

Crock pot apple crisp: 2 cans spoke pie filling 1 box spice mix 2 sticks butter
Layer in crock pot with pie filling on bottom, then came mix, and finally the butter. Cook on high for at least three hours. It's seriously delicious if you don't think about how bad it is for you!
