I don't know yet. DH is working and Frank and I had cheese and edamame for a snack; he's having a panini and soup for dinner, so maybe that, or a kale and chickpea salad.
My husband is away for business so I made my favorite (and his least favorite) veggie. Brussels sprouts. Roasted with maple syrup, balsamic and a little bacon. I ate an entire Costco bag of sprouts myself. That was my dinner.

Leftover over turkey from my second thanksgiving/birthday dinner. Yum. I'll be eating in courses tonight, next I'll make a vegetable, and maybe follow up with a roll. Eating alone is fun sometimes.

This was my inspiration but I changed it a bit. I used 3 tbsp maple syrup to 1 tbsp balsamic. I also sprinkle with cayenne pepper. I've done the bacon before and in the pan with the sprouts and if you dice in finely enough it's better cooking with them

A casserole with turkey sausage, sweet potatoes, eggs, scrambled with cream, poblano peppers, rotel, and feta cheese. I make it a lot. It's cheap and one night of cooking is like 6 meals for both me and H.
I had lasagna my mom made and sent home with me. You know those nights you're just really appreciate someone because they made you food. That's me tonight with my mom.
I don't either but honestly - when it is eaten the same day it's caught it's just white and flaky.
