Ds1 we took it away for all but nap/bedtime at 18m then cold turkey just after 2. Ds2 is obsessed with his (I think because ds1 takes everything but that away from him!) and I try not to let him have it tooooo much but it's way more than ds1 did at this age. I will probably try at 2 still though.
We dropped it in increments because we wanted to have it to fall back on to help with sleep when we were traveling. He'd never really used it during the day - mainly for sleep and in the car. For the most part we stopped overnight when DS1 turned 1, not allowed in the car at 1.5, and took it away for naps at 2. Our biggest problem was that we didn't throw them all out at 2, so every once in awhile he'd find a hidden pacifier and throw a fit. Also, DS2 was born when he was 2.5 and he tried to steal all of his pacifiers but they were too small and he lost interest finally.
We did it at Christmas. He was almost 2.5. He had a biting phase so we let him hang out to the pacifier for a while bc it helped him not bite when it was in his mouth. We told him he needed to give his wubbies to Santa so he could give them to the little babies that needed them, and Santa would trade the wubbies for a present. He asked for a dusty crop hopper plane so that's what he got. We collected all the wubbies and put them in a bowl next to the cookies and milk for Santa. It worked perfectly! Obviously that won't work at this time of year but I've heard of people doing a pacifier fairy.
