Sunday: tacos with refried beans and corn Monday: Zupa Tuscana-I've never made it, using a recipe from Budget Bytes Tuesday: Chicken Stir Fry Wednesday: Banana Nut pancakes with blueberries mixed in, sausage and fruit salad Thursday: Grilled Steaks, new potatoes and grilled asparagus Friday: 1st Farmer's market of the year!!! I will be drinking local beer and eating freshly baked muffins.

Ok, I just spent some time on Pinterest and have come up with 3 things that feel achievable!
Tomorrow, when I have time, I'll make a lasagna. I might even make two and freeze one. That will give me leftovers for lunches and other dinners during the week.
Asian Sesame meatballs in the crock pot, over cauliflower rice. Again, leftovers for lunches.
Enchilada Quinoa in the crock pot. More leftovers for lunches, and zero work when I get home at night.

Uh, leftovers from tonight for the next few days. Then probably Whataburger on Tuesday, and then I'm OOT on a per diem or at moms.
ETA: tonight was a fancy smoked sausage browned then cooked in a mix of crushed pineapple and green salsa. Served on rice with peas in it. Easy and yummy.

Tonight: Date night with another couple. Amazing Mexican seafood restaurant: scallop ceviche, soft shell crab, shigoku oysters and whole fried fluke. And two margaritas.
Sunday: Pot roast in the crock pot Monday: Sweet potato, ham, and white bean soup Tuesday: Enchiladas Wednesday: leftovers Thursday: Burritos from the Taqueria Friday: Pasta with meat sauce or leftovers if there are any.
Tonight we are roasting a chicken, carrots and potatoes Leftovers of that tomorrow Tuesday grilling out chicken and veggie kabobs with sides Wednesday is salsa chicken, rice and green beans Thursday is out for Mexican and margaritas for Cinco Friday we usually do pizza carry out after hiking
Sunday: lamb patties, homemade garlic-herb naan, greek-ish salad Monday: sheet pan chicken tikka with potatoes and cauliflower Tuesday: taco quesadillas, tomato-avocado salad Wednesday: at a friend's house Thursday: depends on weather/t-ball practice, but it will either be out or leftovers, or big salads with chicken Friday: probably pizza Saturday: DD wants to make homemade ravioli

Tonight was supposed to be tacos/taco salad but I didn't want tacos and my H grabbed a burrito for lunch. I just concocted something that I hope is good. It's ground beef, sweet potato, onion, garlic, celery, a can of rotel, and handful of quinoa soup/stew with ras el hanout. I'm serving it with a lettuce and avocado salad on the side. I'm either a genius or an idiot.
We ate it tonight! It is very tasty. It doesn't have to be cod; I always as for the freshest white fish they have under $10 a pound. Then add lots of salt and pepper.
Sun: cilantro lime chicken with pan fried sweet potato, onion and orange bell pepper Mon: a dish I can smothered beef patties Eric will have all the topping and I will just have the beef patty with vegetables Tue:: teacher appreciation night and Chipotle so we will get food from there Wed: mozzarella chicken and spaghetti squash Thurs: green chile chicken enchiladas and that refried bean thing pagas posted in honor of Cinco de Mayo Fri: depends if Eric goes to the coast Friday night.
Today: Chicken kabobs with peanut sauce and asparagus and cannellini bean salad Rest of the week: -grilled flank steak with snow peas and rice -enchiladas I guess that's all I have planned so far. Ha. I have a grocery trip planned for Thursday.

Tonight - Pork Schnitzel, mushroom sauce, peas & rice or noodles. Tomorrow - leftover udon-ish soup with chicken DH smoked on Sunday. Wednesday - ILs Thursday - pasta with meatballs and broccoli Friday - out Saturday - ?? Sunday - I'd love to have steak for mother's day!
