H is oot so my original plan was chinese takeout. I got too lazy to pick it up (there's a $15 min on delivery and I only want moo shu pork), so I made an awesome stir with broccoli, carrots, onion, and rice. I think I'm doing this wrong.
I'm having a simple sandwich with smashed white beans, avocado, cucumber, sprouts and some other good stuff on honey wheat, with a side salad. MH is going out tonight so I'm being lazy.
when you say smashed white beans, you mean you literally just mush some up? this is a great idea. i need to do this!!
Well, it's mixed with a little bit of olive oil and salt and pepper, and the recipe I used also has some cucumber chunks and green onion mixed in to make a sandwich spread. It's pretty good! 1 tablespoon of olive oil in 1 15oz can worth of drained, mushed up beans.

Pasta with homemade marinara and fresh mozzarella. We also picked up some tomato and olive focaccia at an Italian festival earlier today to have on the side.
Diet must resume tomorrow...I have eaten so bad all weekend.

Baked chicken, sweet corn and garlic mashed potatoes. I am realizing that it is possible to make decent meals in a reasonable amount of time... but I need to get more adventurous.
We had what seems to be our regular Sunday standby meal: Papa Murphy's Hawaiian pizza. But this time I got it on the delite thin crust so I could feel a little less guilty.
I did buy the ingredients for that skinnytaste baked pasta that was posted though.
Marinated a pork tenderloin in olive oil, lemon juice, garlic, rosemary and red pepper flakes. Turned out great! Having it with sliced tomato and green beans

I had tofu sloppy joes and cut veggies. MrJJ had a salami sandwich on a pretzel bun. (He had a late lunch and thinks sloppy joes, tofu of not are awful).
I'm going to make some banana bread in a minute. I've been craving it like crazy and last night had a banana nut tea that just pushed me over the edge. (PS. It was from david's tea, highly recommended!)

I do a bean spread that is white beans, some garlic, olive oil, salt & peper and cilantro. I make sandwiches with radish slices and arugula on light rye bread. It's delicious!!!
