We took a break at the resort everyday, but we were there in August and we needed the rest. We rested in the room and used the pool everyday. Generally we came back from the parks around 2-3 then went back around 6 and stayed later. I would not plan an entire pool day, but I could see combining Disney Springs or a waterpark with a resort day.
We went the first week in June and we spent a full day by the pool (also the hottest day). Every day we spent a little time by the pool after we were done at the parks. In the summer it’s a must to cool off in the pool!
We spend the afternoon at the pool on our arrival and departure days and occasionally for an hour or so one other day. For park days we get there at rope drop and stay until closing.

We went in late August and went to the pool only 3 times during our 1-week trip (and one of those were on our arrival day). We were at the parks from rope drop until about 4pm each day. We'd get back to the hotel (AoA) and have dinner and then either it was thundering/raining out so we didn't go to the pool. or DH and I were too pooped to get the 4 kids changed, gather up pool stuff, etc. and go back down to the pool.
In early March we wouldn't spend much time at the pool unless it's abnormally hot. When we go in the summer we spend most afternoons there. The pool is part of the draw for us--DD loves fun waterslides.
When we went in early April we spent a decent amount of time either at the pool or splash pad. We were done with parks by mid-afternoon so we’d spend the late afternoon and evening there, plus part of our “off” day and departure day.
We went the 2nd week of March and went to the pool at the Poly almost every day.
This makes me very happy to see. The kids are excited for a lot of things, but the pool at the Poly is at the top of the list.
OP- we’re keeping our schedule open in the afternoons/early evenings so we can go back and swim if we want to take a break from crowds, but we’re not specifically planning it out.
We are going for a week in late August and are planning a mid day break almost every day. We're staying at Beach Club and my older daughter is super excited about the pool.
My younger DD will also likely still be napping so we were planning on coming back anyway for her nap (unless she naps in the stroller)

We went for a week in early December. We had 3 park days, and 3 non-park days. We wanted to have a more relaxed trip this time. (DS ended up in the hospital after the last trip due to a severe confusional migraine triggered by exhaustion and dehydration.) It was the best trip ever. Most days were in the mid-70s, although one non-park day was in the lower 80s and another was in the 60s. But the kids swam on all non-park days, and most park days (in the evening) and they even wanted to leave MK mid-afternoon on our last full day to go back and go swimming.
We do 1-2 afternoons for a few hours, usually on our Magic Kingdom days because the crowds do our heads in! Last trip we stayed at Beach Club and thought we'd use the pool more, but DD's ear drum burst after the first day in the pool and so that was it for us.
