I need your best, hands down recipe. To save money I'm going to make cupcakes for my DDs birthday party. I've tried some recipes before and they just never turn out they way I want. I don't care if its buttercream or whatever. I just need a good recipe under my belt! Thanks!
what are you looking for? Flavor quality? easy to pipe? Doesn't melt in warm weather? success depends on your goals.
Personally, I like a good, light buttercream. flavor matters most to me and I won't use other fats. I start by whipping the butter to twice the volume (five minutes or so) with the paddle attachment before I add the sugar. That gives the nice, light texture. (whisk attachment creates too many small air bubbles). I sift the sugar or any cocoa as you add it to avoid lumps. A large, simple round tip is easiest for cupcakes and any air bubbles are less of an issue.
Or - make it really easy. Chocolate ganache and just dip them when it starting to thicken. fast and easy.
I just use the one from the C&H package. I add just a tiny pinch of salt, too. Just a basic buttercream that to me has a good balance of sweetness and butter.
I prefer cream cheese frosting. It is richer and sweeter depending on how much sugar you add. Stores often use grease frosting. If that is what you want Crisco works for that. Buttercream is fussy and dies not hold up to hear, humidity or time. You can also do a powdered sugar glaze, add a small amount of milk or juice until it is the consistency you are seeking.
